The Dish: Eau's Bōken offers adventurous style of Japanese dining

New sushi eatery Boken at Eau Palm Beach Resort features omakase, a style of "chef's choice" Japanese dining.

Instead of ordering from a menu, consider a more adventurous path when dining out: being served what a chef thinks will delight you.

That’s a style of Japanese dining that’s now offered at Bōken, a new sushi spot at Eau Palm Beach Resort in Manalapan.

Bōken features omakase (oh-ma-kah-zay) — “chef’s choice” or “I’ll let you decide” in English — three nights a week.

Instead of ordering from a menu, guests are served a paced progression of small plates — mostly sushi — conceived and created before their eyes by Eau’s sushi chef Chris Cantrel.

Omakase has been available in Palm Beach for years. Asian hot spots Imoto and Echo, for instance, feature omakase by request and the number and type of small-plate courses can vary.

At Bōken, a set 15-course small-plate omakase experience is offered. It’s available Thursday, Friday and Saturday with seatings at 6:30 p.m. and 9:30 p.m. Wine and sake pairings are included.

The 15-course omakase experience at Bōken is $155 a person, plus tax and gratuity; reservations must be made at least 24 hours in advance. Bōken, which means “adventure” in Japanese, is among other new dining outlets at Eau Palm Beach Resort.

The new eateries debuted just before or after the Manalapan resort in late August completed a multimillion “reimagining” of its social spaces.
